How I Turned Leftover Peanut Bars into Irresistible Biscuit Snacks


You know those moments when you’re staring at leftovers, wondering what to do with them? That’s exactly where this recipe came from. I had some leftover peanut bars sitting in my kitchen, and instead of just snacking on them, I thought, “Why not turn these into something a little more special?” And that’s how these crispy, nutty biscuit snacks were born!


The Start: My Leftover Peanut Bars

These peanut bars are something I’ve made before—a mix of roasted peanuts, oats, chia seeds, chocolate, cranberries, and a drizzle of honey. After pressing them into a tray and letting them set, I usually slice them into snack-sized bars. They’re crunchy, slightly sweet, and packed with nutty flavor. But this time, I wanted to take them up a notch.


The Idea: Adding Pastry

I thought, why not wrap these bars in buttery pastry? So, I grabbed my shortcrust dough and got to work:

First, I rolled it out into a rectangle.


Then, I pressed the peanut bars onto one side of the dough.

I folded the top half of the pastry over the bars, pressing them together.


After chilling the dough, I sliced it into neat little strips, ready to bake.

This was a bit of an experiment, but I love playing around in the kitchen—especially when it turns out well!


The Bake: Watching It Transform

The real magic happened in the oven. As the pastry puffed up and turned golden brown, the whole kitchen smelled amazing. When they came out, the biscuits had these gorgeous layers, with the nutty peanut filling in the middle.


The Taste Test: A Crunchy, Buttery Treat

I couldn’t wait to try one. The pastry was flaky and light, while the peanut bars added a crunchy, slightly sweet contrast. They weren’t too sugary, which made them perfect for an afternoon snack with a cup of tea.
