No-Bake Honey Oat Bars: Soft Nougat Style Recipe

So here’s what I did. After roasting my instant oats and walnuts until they gave off that beautiful nutty aroma, I set them aside. Then, I prepared my “binding” mixture: honey and butter warmed up in a small pan over a double-boiler setup. (I highly recommend this setup, especially if you tend to walk away from the stove like I do!)

With the double-boiler, the honey and butter mixture heats up slowly and evenly. No scorch marks, no burnt sugar—a perfect warm base that’s ready for egg whites. 


When the honey-butter mixture is just warm to the touch, I start incorporating the egg whites, spoonful by spoonful, beating vigorously each time to keep things light and fluffy. Slowly, it turns creamy, with tiny bubbles forming—a sign that it’s transforming into that nougat-like texture.

Hovering over the Flame

Then comes the real test. I hovered the pan just above the stove’s low flame, lifting it and setting it down in intervals. Stirring constantly, it’s like coaxing it to life. I avoided any direct, high heat, and after about 10 minutes of patience and lots of stirring, the mixture thickened into a creamy, soft, and chewy texture.

Once that’s done, I pour it over the oats and nuts, and it all comes together beautifully. These bars don’t just stick—they hold their shape with the nougat texture I love. 

A quick press into a tray, 30 minutes in the fridge, and voilà! A chewy, nougat-style bar that’s as fun to eat as it is to make.

  • 3 cups mixed nuts, chopped
  • 2 cups instant oats, roasted
  • 1 cup dried fruits (like cranberries or raisins)
  • 1 cup honey
  • 3 egg whites, at room temperature
  • 1 tsp vanilla extract (optional)
  • 1/2 tsp salt (optional)
Instructions
  1. Roast the Nuts and Oats
    Pan-roast the nuts and oats over low heat until fragrant. Set aside.

  2. Prepare the Honey Mixture
    In a small pan, warm the honey over a double boiler setup, along with the butter if using. Once warm but not hot, start adding egg whites slowly, mixing continuously.

  3. Stirring
    Keep the pan on low heat, stirring continuously for about 10 minutes, hovering above the flame to prevent burning. Check if the mixture reaches the desired sticky but not hard consistency.

  4. Combine
    Pour the honey mixture over the oats, nuts, and dried fruits. Mix well until everything is coated.

  5. Press and Set
    Press the mixture into a lined tray and refrigerate for 30 minutes or until set.

  6. Cut and Serve
    Slice into bars and enjoy your homemade nougat-style honey oat bars!
