Is cooked green banana good for you?

We read somewhere that beside potassium, green bananas has a special kind of fiber that’s great for your tummy. It helps with digestion and keeps things moving smoothly. It is the reason why we are keeping the skin in our banana curry recipe.

Actually before we end up with curry, it all started with banana crisps—those crispy, golden slices that inspired to be creative. As we munched on them, a curious thought crossed our minds: 

Could green banana curry be just as delicious? 

We decided to find that out too using a curry recipe from Indonesia called Gulai Ayam

Ingredients:
  • 3 Raw Bananas
  • 6 Fresh Chillies
  • 1 Onion, 15 Shallots, 6 Garlic Cloves, and 1 inch of Ginger
  • Star anise, cardamom pods, cloves, and a cinnamon stick.
  • 125ml Milk + ½ tsp Vinegar or sour cream.
  • 200ml Coconut Milk
  • 35g Kerisik 
  • 100g 888 Curry Powder
  • 300g Chicken Pieces
  • Sugar, Salt, and Pepper
  • 1 Asam Keping (Dried Tamarind Slice)

Cooking Steps:

Banana Prep:

We boiled the raw bananas, keeping the skin on. This helped them keep their shape and stay firm. Removing the outer layer ensured cleanliness.

Chili Paste:

We blended ginger and fresh chillies into a fiery paste.

Curry Base: 

Fragrant spices—star anise, cardamom, cloves, and cinnamon—sizzled in the pan. Then add curry leaves. Shallots, onions, and garlic joined the party, softening beautifully. Keep frying until the oil separates. 

Spice Fusion: 

We added the chili paste and our special 888 curry powder (mixed with water to form a paste). The kitchen smelled divine.

Creamy Magic: 

Coconut milk and our secret sour cream (milk with vinegar) swirled in. The curry simmered, thickening gently.

The Hero Walks In - Boiled Banana: 

Boiled raw bananas took their place, absorbing the rich flavors. Salt, sugar, pepper, and the tangy tamarind slice joined the dance.

Finishing Touch: 

Adding 30g of Toasted shredded coconut gives it nuttiness, and the curry thickened to perfection.

The Taste Test: A Revelation

With each spoonful, we discovered brilliance. The result is a Green Banana Curry that goes beyond expectations. The bananas absorb the rich flavors of the curry, creating a dish that is both unique and satisfying. The banana was not just tender like biting into potatoes but the skin gives it a nice crunch. The banana has a slight tangy taste to it and combined with the curry, it tastes amazing. The curry was rich creamy and full of spicy fragrant.
