The Ultimate Famous Amos Upgrade: Button Chocolate & Walnut


Today I am going to upgrade the classic Famous Amos cookie with a simple twist. Instead of using regular chocolate chips, we'll be using button chocolate. To make it exciting I will also be adding a piece of roasted walnut on top.

Measure out 120g flour with 30g cornflour and 1/2 tsp baking powder. I found 1/2 tsp baking powder to be a little too much unless you like puffy cookies. Perhaps next time I will reduce it to 1/4 tsp instead. 

Whisk the flour and baking powder until combine.

Time to cream the 125g butter and 75g brown sugar with 25g caster sugar together. Break a large egg into a measuring cup. You should get 50ml of eggs. Beat the eggs then pour 25ml into the butter mix.

I remember tasting my first Famous Amos Cookie. The smell of the Famous cookie was the first thing I experience. Then came the bite. It was so addictive and I finished the whole 100g bags in just a few minutes. That experiment left a lasting imprint in my brain. I wanted more! Like I said it was a very addictive cookie

But Famous Amos cookies are not cheap

They are considered luxury cookies. Something that you cannot keep buying all the time. Famous Amos Cookies are also not readily sold in the supermarkets. You can only get them in the malls or airports where their shop is usually located.

The price and difficulty of getting them is what prompted me to make Famous Amos at home. I started an experiment on finding the recipe for Famous Amos back in 2009. A lot of recipes claimed to have the right ingredient but some are a fake. You can spot a fake by looking at their sugar quantity. 

Famous Amos gets its crunch and deliciousness from the caramelisation of the sugar. Anything less than 200g will give you a butter cookie flavour

Like I was saying, I wanted to make another batch of Famous Amos cookies but I did not have any chocolate chips in the kitchen. What I did have was white button chocolate. This new upgrade Famous Amos Cookie was created because I was lazy.

Use a spoon to scoop a bit of the cookie dough. Form into small balls the size of marbles. Press a button chocolate onto the top of each cookie. Top the button chocolate with a small piece of roasted walnut. Bake for 10-12 minutes or until the edges are golden brown. 

And that's it! Your upgraded Famous Amos cookies are now ready to be enjoyed. The combination of the creamy button chocolate and crunchy walnut is sure to be a hit with your friends and family.

INGREDIENT

125g unsalted butter softened

75g light brown sugar 

25g Caster Sugar

1/4 tsp salt ( to omit if using salted butter )

1/2 egg

1 tsp vanilla extract 

12g Instant oats (2 tbsp)

12g ground almonds (2 tbsp)

150g flour 

1/4 tsp of baking powder
