This butter cookies baked without oven goes with many names. It is called Kuih Makmur or Momo in my country. Maamoul cookie in the middle east. Russian tea cakes by the Russians. It is also nicknamed snowball cookies by some.
I will be making a no oven butter cookie recipe that has tested time. It is a recipe that was passed down for years through our ancestor and they did not have any oven.
This ancient butter cookie recipe crosses borders until it finally reaches the shores of my city. Back then they did not have any electricity and no refrigeration therefore butter was not the ideal choice.
Ghee was used because it does not get rancid easily. In my recipe I opt to go with butter instead.
The trick to cook this butter cookie without oven is to fry the flour before you add the rest of the ingredient.
This no oven butter cookie taste buttery flavor and a nutty aroma.
One of the main ingredient is peanuts. In this recipe I used raw peanuts which I fry dry without oil on low heat. Taste a peanut to see if it is thoroughly cooked before lifting them off the heat and go to the next step.
The skin will easily loosened by squeezing between your fingers. Place the nuts into a food processor and grind until fine. In my case I decided to go old school and use my stone mortar instead
INGREDIENT
100g Salted butter
60g Icing Sugar
180g Flour
60g Peanuts
Fry the flour without oil on a wok or a large pan. Keep stirring on low flame. When the flour is cooked you will smell a nutty aroma and the color has an off white to it. Switched off the flame immediately. Take note the flour burns very fast from this point on.
Place the cooked flour and icing sugar in a bowl. Use a whisk to mixed them together then pour butter into the flour mixture. Stir the flour butter mixture until well combined.
