While browsing through YouTube last week, we saw this Green Onion Omelet Pancake being made in Taiwan by the hundreds. Apparently 500 where made in day! We thought it looked so easy and tasty that we had to try and make one at home.
The Street Vendor use a pancake which they made from scratch but we decided instead of making from scratch and risk the chance of failure we opt for ready made frozen paratha.
Pan fry frozen paratha with a little oil. Flipping it from side to side until brown over low flame. When it is cooked we put it aside.
Mixed some green onions with an egg. Add a bit of seasoning for flavor
Pour the eggs on the pan. Then place the cooked paratha on top the eggs
Flip the paratha and omelet to the other side. Then place extra filling if needed or just serve plain with omelet. For us we made them into a complete with cheese and vegetables.
Now fold the pancake like an envelope.
