Rice wine chicken soup, fried spring roll and instant jelly dessert is our lunch recipe for today. Is this lunch recipes healthy and good for our low cholesterol diet plan?
Some will say Yes and some may say no.
We made our rice wine from scratch 2 weeks ago and today we are harvesting the wine. We manage to collect more wine than usual because this time we did a little trick. Watch the video
The same trick that we think all rice wine seller are also doing. Adding additional water and sugar to the initial process so that it produce more wine.
We used 500ml of bottled mineral water instead of normal drinking water from the pipe to avoid contaminating the rice wine mixture.
Once more we tied up the jar and let the fermentation continue.

After 2 weeks the rice would have mostly settled to the bottom. That is the time to harvest the wine.
We found using a large herb bag to strained out the wine from the rice is more effective in removing most of the rice residue. However if you do not have a herb bags then using a sieve and a tea cloth strainer is sufficient enough. You can watch how we did that in this video.
Tapai is a kind of rice wine native to Sabah where I was born. Rice wine has always been a part of our culture in East Malaysia for generations. Our old folks recommend rice wine Chicken soup to be eaten during the month long post-childbirth confinement period. It our local traditional beliefs that it helps with blood circulation and ease bloating or wind in the stomach. Apparently it helps to restore the balance upset by the birth.
Normally our local recipe is very plain ; Just chicken, rice wine and ginger but we prefer to add carrots and tomatoes to our soup.
We start by cutting some tomatoes into quarters. Tomatoes balance the taste of the soup by giving it a tint of sourness.
Carrots especially radish or white carrot is great in reducing the smell of the rice wine. Use them if you find the rice wine smell too strong for your taste.
Place all the vegetables in a pot with some dried shitake mushrooms.
We need to pan fry our chicken to give it color. Start by cutting an onion and some garlic.
Ginger is an important element and a must in this recipe. It gives the dish a peppery taste and helps to increase the heaty property of the rice wine chicken soup.
Place the chicken pieces with the herbs on the pan with a bit of oil. We will pan fry the chicken until brown but not thoroughly cooked. You can skip this step if you prefer a shorter process.
Placed the cooked chicken into the pot with the rest of the vegetables. Add 500ml of rice wine or more and enough water to cover all the ingredients .
Add seasoning and adjust it to your taste. Bring to boil until the chicken is tender.
In our double wrap fried vegetable spring roll recipe we only use 2 type of vegetable for the filling and a bit of spring onion for color.
We steamed the vegetables for 10 minutes. We found steaming helps to cook the vegetables without getting them too soggy.
To add more flavor we sprinkle chicken granules and sesame seeds to the cooked vegetables.
Why wrap twice?
Spring roll skin breaks easily after the filling is added. Double wrapping will give it an extra lining so you do not have any broken spring rolls during frying. Double wrapping also helps to keep the fried spring roll crispy and crunchy longer
These spring rolls need longer frying time because of the double skin. To avoid burning fry the spring roll in low heat.
