Bitter gourd Salted Egg Less Bitter

Cut the bitter gourd length wise like shown so it has a more uniformed lenght.
Soak the cut bitter gourd in salted water for 30 minutes. This also helps to reduce the bitterness.

Soak in salted water for 30 minutes

Squeezing helps to remove some of the bitterness. To make the batter you need the following :

2 tablespoon flour

1 tablespoon cornflour

3 tablespoon water

pepper and salt to taste

Add more water to get the creamy batter consistency

Boil 2 salted egg and remove the yolk. Use a spoon to smash the yolk. Leaving a few bigger pieces is good too if you like the bite when you eat them later.

Drenched the battered bitter gourd in more flour until coated all over. Then fry the bitter gourd in oil with low heat.

Fry the bitter gourd until it turns slightly brown which will take a few minutes.

To prepare the salted egg sauce you will need the following

2 salted egg yolk

30g butter

1 tablespoon sugar

Curry leaves

Chilies

Fry the butter until melted then add in the yolk. Keep the fire low to avoid burning. Then you throw in the curry leaves. Mix in the cooked bitter gourd then the chilies. Give it a quick toss then it is ready to be serve.
