Homemade Chicken Noodle Soup with Egg Noodles


Our Easy Flavorful Wholesome Chinese chicken soup with egg noodles has 4 special ingredients. Welcome back to our channel guys!. This is my Mom's chicken soup recipe.

Our Chinese Chicken Noodle Soup is nourishing dish

The first key ingredient 1 tablespoon of goji berry

The 2nd key ingredient 4 or 5 Chinese red dates or jujubes

The 3rd Key ingredient a piece of Dried squid.

Our fourth key ingredient One piece Mei CAI or salted Chinese preserved vegetable.

There are 2 common Chinese preserved vegetables. Zha Cai and the other Suan Cai.

Mei Cai is not as common as the other two. Make sure you pick the right one.

First step is to wash our salty Mei Cai. Washing a couple more times until there are no more sand or grit. You would not like to find sand swirling at the bottom of your soup. You can soak them if you want to reduce the saltiness.

Next we must wash our umami booster the dried squid. This squid will help to deepened the flavor of our soup.

Massage our chicken pieces with salt for extra flavor

Lets start cooking by heating up some oil

Fry 1 chopped onion, some slices of ginger and last but never forgotten some garlic until they turn brown and become fragrantly.

Now it is time for our chicken pieces that has been nicely marinated with salt. Drop them in and Give them a few toss. Add one or two liters of water. Look out that you do not get splattered while you are doing this. 

As you bring your soup to a boil you will start to notice soup scums forming at the top

This is just impurities that is coming out from your chicken.

 You can skim this off by using a soup ladle. 

You do not have to do this but leaving this soup scum inside the soup will make it more cloudy

Now its time to add our 4 key ingredients Mei Cha, Jujube, Goji Berries and our dried squid

Cover the pot and let the soup boil for 5 minutes before you start to add the rest of your vegetables. 

We use 2 chopped carrots, 2 or 3 potatoes cut in super big chunks and 2 lovely ripe tomatoes cut into quarters

Give the vegetables a quick stir to make sure the soup is covering them.

Add salt and pepper. Quantity depending on your taste.

After 15 minutes, take out the potatoes while we simmer the soup for another 20 minutes until  our chicken turn tender and soft.

Look for the jujubes and squeeze them. This process will enhanced more of jujube flavor into the soup. They should by hydrated. Looking plump and soft to squeeze.

When you are about to serve you can put the boiled potatoes back into the pot.

It is now time to prep the noodles

Here we are using fresh made Chinese egg noodles

Now its time to pour our Chinese chicken soup on top of our cooked noodles.

Scoop and pour enough soup to cover your cooked noodles.

To get the soup infused with the noodles, keep tossing it around.

Then place a nice piece of chicken drumstick, a boil egg, cooked potatoes and carrots. Garnished with fried shallots

1 tbsp of goji berries

4 Jujube dates

1 salted vegetable

1 dried squid

2 liters of waters

Salt

Pepper
