Moist Black Forest Cake Recipe

This NOT a genuine black forest cake but it is equally as good. A true black forest cake contains alcohol particularly Kirsch.

All you need to make this cake is a can of pitted cherries, whipping cream, chocolate cake and chocolate shavings. I feel it is easy to make however assembling it takes time. It is almost similar to my Cherry Black Forest Chocolate Sponge Cake except this one has no chocolate cream to it.

The shrinking cake
Yes this cake will shrink but do not fear. Just turn it upside down and frost it up to hide any imbalance.

The Cake
The ingredient below makes one cake that fills a 9 inch square pan. This black forest recipe requires two 9 inch cake.

Mixture A
4 egg whites
½ cup of caster sugar
¼ tsp cream of tartar

Mixture B
1/3 cup of caster sugar
2 tbsp of cocoa powder
1/2 tsp baking soda
¼ tsp of chocolate emulco
½ cup of water
½ cup of vegetable oil
4 egg yolks
1 cup flour

  • Beat mixture A until soft peak
  • Beat mixture B until creamy. Flour to add in last. Add mixture B into mixture A. Gently fold over batter into egg white.
  • Baked 160C for 30 minutes.
The Cream

1 cup whipping cream

The Filling

1 can pitted cherries
1 tbsp corn flour

Cooked together with juice until thickens.

Assembling the cake

Strained cooked cherry juice and mixed the cooked cherries with half of the whipped cream. Save 8 cherries and the balance cream for decoration.
