Egg White Chewy Granola Bar


I have cholesterol problem. It has been steadily going down the last four years from a high of 8 mmol/l to 6 mmol/l at the time of writing this. Thanks to exercising as often as I can, fruits for breakfast and salad for lunch. For dinner I still eat the full meal and the occasional dessert. 


Everyone has been advising me to try eating oats. I thought of looking into going for oats again. I hope oats might be the last push to get my cholesterol down to the borderline. But I hate eating cooked oats despite mixing it with honey, fruits and nuts. 

I decided I should try making granola bars. I have done it before. That recipe is delicious but it is made with condensed milk which according to internet is another cholesterol culprit.

I have also made granola without the condensed milk but it becomes crumbly and will not stay in a bar shape.

After putting my thinking hat, I have decided to add one extra ingredient into my recipe which I hope will hold it whole thing together. 

Guess what nougat, macaroons and vanilla coated peanuts has in common?

Egg whites!

Ingredient
1 large egg white
2 tbsp brown sugar

1/3 cup honey
1/2 cup vegetable oil
1 cup nuts
1 cup dried fruits
4 cups instant oats
1/2 tsp vanilla
1/2 tsp cinnamon powder
1/2 tsp salt

Method
Toast the nuts in the oven. Beat egg white with sugar until soft peaks. Mixed the beaten egg white into the rest of the ingredient.
Pour the granola into baking tray lined with grease paper. Baked for 30 mins at 160C
