As a child, I always looked forward to munching on honey roasted peanuts from the store. But as an adult, I realized they were never as satisfying as I remembered. So, I decided to take matters into my own hands and create my own recipe.
500g of raw peanuts, ¼ cup honey, 2 tablespoon unsalted butter, 1 to 2 tablespoon granulated raw sugar, 1 teaspoon vanilla (optional), 1 ½ teaspoon salt, and caster sugar (optional) were all I needed.
With a greased baking tray and oven preheated, I heated up the honey, butter, vanilla, salt, and sugar in a pot until it melted. Then, I added the peanuts and coated them well in the honey mixture. Keep stirring until the sugar crystalized into a white powdery coating.
After pouring them onto the tray, I roasted them in the oven for 20 minutes until brown, shaking and stirring them occasionally to ensure even roasting. Once done, I broke up the clumps and sprinkled the remaining salt and caster sugar over the cooled peanuts.
The result was absolutely delicious and far better than anything I could have bought at the store. Now, I can enjoy my favorite childhood snack and even better, it's cheaper and made with love.
