I want to do crispy crepe. I found a few recipes online and I selected two. The 1st recipe is easy to do. After blending all the ingredients, I place my batter into a plastic cookie jar. Its quite convenient for transporting the excess to mom's house. :)
Overall...this crepe is not crispy at all BUT it has a nice light texture. Good for fillings especially dessert. You may need to add flavor. If follow the original recipe (given below) it will be quite bland. However being bland is good if you are going to add the filling later. As for me, I just drizzled honey all over them and it tasted just fine.

Finally...a crepe that holds its shape. Its like ice cream wafer. So in a way this crepe can be use for this purpose too! I search and google everywhere in the net for crispy crepe but kept getting the soft type until finally I thought of ice cream wafer. I find reheating the crepe the second time makes it even harder and crispier.
2 large eggs
1/3 cup (80 grams) granulated white sugar
4 tablespoons (57 grams) unsalted butter, melted and cooled
4 tablespoons milk
1/2 teaspoon pure vanilla extract
1/3 cup (50 grams) all purpose flour
1/8 teaspoon salt
Vegetable oil and pastry brush
- Put the eggs, sugar, melted butter, milk and vanilla extract into blender. Blend until frothy. Add in the flour and salt. The batter will be quite thin.
- Heat up an 8-9 inch (20-23 cm) non stick pan over medium heat until it is hot.
- Reduce the heat to medium low and brush the pan lightly with vegetable oil.
- Pour batter into the pan and immediately tilt or rotate the pan so the batter forms a thin 5-6 inch (13-15 cm) circle.
- Place pan back on the heat and cook until the batter is set and you can see the underside is golden brown (3-4 minutes). Slip a metal spatula under the crepe and gently flip it over. Cook until golden brown. Remove the pan from the heat and slide the crepe from the pan onto your work surface.
- These cooked crepe or wafers can be stored in an airtight container.
- To re-crisp preheat the oven to 400 degrees F (205 degrees C), place on a baking sheet and bake for about 3-5 minutes or until the crepe is hot and soft.
- Makes about 8 crepes.
