Easy & Fast Chinese Crab Patties With Pork & Prawns



I love stuffed Crabs and I have attempted this dish once. It was hard work extracting the meat out of the crab. I realized you can just order the crabs claws from the crab vendors. It was less time consuming to take the meat out from the claws than from the body. The disadvantage is that you do not have the shell to place your patties into so no stuffed crab dishes to show off.



Nevertheless, just by having a crab cake dish will taste the same and very much less messy. My recipe contains more crab meat than pork. You can always add more pork meat. There is no perfect recipe for this dish. I have tried adding potatoes, mushrooms and top with cheddar cheese and the dish still comes out delicious. You can add breadcrumbs to give it more volume but I prefer mine pure.

You can also coat the patties with breadcrumbs but I prefer without. I think you only use breadcrumbs coating to stop the patties from crumbling. That is if you are doing your patty without the pork and shrimp and using the western cooking with mayonnaise as one of the ingredient.

Here I am going with the Chinese method so pork and shrimp is a must to hold those pretty patties together.

Preparing the Crab Meat

Wash the claws then steam it for 10 minutes. Let cool then use a hammer to break it. Some people break the claws before steaming it but I find the crab juice all runs out if you do it this way.

Ingredient
¼ cup finely chopped onion
300g of cooked crab meat
150g of minced pork
150g of minced shrimp
1 tbsp of corn flour
1 tbsp of oyster sauce (optional)
1 egg

Salt & Pepper to taste

Method
In a bowl, mix all ingredients and blend well.
Take a spoonful and make them into patties.
Cover and refrigerate for at least 1 hour
Heat a nonstick pan to medium heat and coat with vegetable oil.
Place crab cakes in pan and cook until golden brown.
Serve immediately


Tips: Take a tiny portion to fry. Taste cooked portion and adjust the favor if needed.
